- About 7 potatoes
- 9 eggs
- Olive oil
- Crushed Red Pepper
1. Slice potatoes and whisk eggs.
2. Add 1/2 cm of olive oil. Once hot place garlic and stir for 1 minute. Add potatoes, salt, pepper, and crushed red pepper. Stir well then cover. (medium heat slightly-above medium)
3. Continue to stir potatoes ever few minutes scraping bottom of pan each time.
4. When soft, transfer potatoes into bigger skillet.
5. Pour egg mixture evenly. Cook for about 12 mins and flip to cook other side.
